It wasn't easy finding store-bought bread that isn't white bread in disguise, so I made my own whole wheat. It wasn't easy finding a whole wheat bread recipe that didn't require eggs, sugar and kneading, so I used the Spelt bread recipe mentioned in an earlier post.
It wasn't easy finding a loaf pan in my mix that would bake bread in the right shape to make these awesome little sandwiches.
It wasn't easy building them in such a way that they would fit onto my panini maker without all the ingredients spilling out over the sides. But I managed and as the first shot clearly shows, they turned out beautifully. Ingredients? Pounded skinless, boneless chicken breasts sauteed with onions in pecan oil, soy, and Sriracha hot chili sauce.
It wasn't easy to resist layering these fantastic mini-slices of bread with a little mayo, the chicken saute mix, New Zealand white cheddar cheese, and kosher dill pickle slices, and my favorite trick..... put the mustard on the outside of the bread bef
