Sardine Sandwich?
Did someone say Sardine Sandwich? Yes I know, about 95% of people in the U.S. would pass on a Sardine Sandwich quicker than kudzoo, but wait just a moment. Most folks wouldn't think twice about eating canned tuna, right? So why the aversion to sardines? You'd probably say sardines are fishy and tuna is not, but that 's not always true. If you choose a high-end, high-quality, fresh sardine they are really very mild and not more fishy than canned tuna. If you're not convinced, try ordering them in a fine seafood restaurant. Environmentally conscious chefs accross the country are experimenting with these tiny, sustainable fish while boycotting other less sustainable fish.Health-wise, sardines are very high in cholesterol lowering fatty amino acids, virtually mercury-free and packed with iron, magnesium, phosphorus, potassium, zinc, calcium, copper and vitamin B, vitamin D and ....... they're cheap!

Cap'n Keiths Wahoo Sandwich
4 pieces Wahoo fish
4 light crusty sandwich rolls, toasted
Leafy green lettuce
Fried capers (recipe follows)
Fresh tartar sauce (recipe follows)
Préparation
Tartar Sauce:
1/2 Cup Mayo
3 Tbls Fresh Dill (or 2 tbls dry)
1 Tbls Finely Minced Onion
Blend together and Chill
Fried Capers:
3 Tbls Olive Oil
4 Tbls Capers, drained
Heat oil in a small saute pan, add capers and toss until crispy and brown, drain on paper towel

Wahoo Fish:
Drizzle fish with olive oil, soy sauce, salt and pepper, let sit for 5 minutes. Place fish on a broiling pan and broil for two minutes each side or until golden and cooked through
Assemblée
Paint each side of toasted roll with tartar sauce, layer lettuce leaf and wahoo, sprinkle with fried capers and serve

Seared Ahi with Mayosabi! Si Magnifique
This Seared Ahi Sandwich is another original creation from Le Gourou's Signature Selection. Please to enjoy!
Ingrédients
Use French hamburger bun, toasted
2 Good size pieces of fresh Ahi Tuna (approx 1/4 lb each)
5 Tbls Mayo mixed with 1 Tbls wasabi paste
1 Tbls Wasabi Paste for tuna
2 Leaves of leafy green lettuce
1 Small Tomato
1 Pickling Cucumber
2 Tbls olive oil
1 Tsp sesame seeds
3 Tbls Soy Sauce
Préparation/Assemblée
In a large skillet bring olive oil to a very high heat
Drizzle both sides tuna with soy sauce and paint lightly with 1 Tbls wasabi paste
Sprinkle lightlly with sesami seeds
Place tuna in hot oil and sear each side quickly (approx 30 seconds each side)
Remove from heat
Assemble sandwich using wasabi and mayo mixture, lettuce, tomato slices, cucumber slices, and tuna.

Soft-Shell Crab Sandwich!!
Aside from lobster, soft-shelled crab are likely to be the highest priced item on any seafood menu. The reason is all about timing.In order for a blue crab to grow larger it must periodically shed its hard shell. During this molting process the crab slides out of the hard shell and for a short period of about 3 to 4 hours is in a soft stage. If removed from the water at this stage, the shell will not harden.
In their natural environment, blue crabs begin shedding their shells on the first full moon of May and are harvested from April through September.
Another one from Sam's Signature Series. The crème de la crème
Ingrédients
4 soft shell crabs
1 egg (lightly beaten)
1/2 cup Panko (Japanese bread crumbs)
Salt & black pepper
1 box radish sprouts
1 Tbls Olive oil
6 Tsps Ponzu sauce
3 Tbls Sam's Mayopeno spread
1 loaf rustic Italian bread sliced
Préparation
Heat vegetable oil to 300 degrees in a deep pot or deep fryer
Clean crabs with water and blot dry with paper towels
Coat crabs well with egg and then panko
Deep fry each crab separately until the shell turns red and the panko becomes golden brown
Remove and drain crabs; set aside
Discard the roots of the radish sprouts
Lightly season sprouts with olive oil, ponzu, salt, and black pepper
Spread Sam's Mayopeno over bread (toasted or not)

Hot Pursuit Yields Bag of Sandwiches
After fleeing the scene of an accident and leading police on a chase last Tuesday, Mr. Turoqua Correll, age 30 of Salisbury was charged with 2 counts of assault, misdemeanor larceny, injury to personal property, possession of marijuana, possession of drug paraphenalia, and carrying a concealed weapon. Nice work!While shopping at a local discount market, Mr. Correl hit a man from behind and knocked him to the ground. Then pushed a pickle jar into a woman's foot and stole a paperbag containing what else?
A Fish Sandwich, Cheeseburger and French Fries! He later drove his Isuzu Rodeo into the back of a Cadillac Escalade and without stopping, jumped onto the Interstate. Highway Patrol continued the pursuit and finally stoopped Correll finding marijuana and a machete in his car.
Correll was sentenced and will be in jail for his next few meals. But I'm wondering if and when he was able to eat his bag of sandwiches.
