4 pieces Wahoo fish
4 light crusty sandwich rolls, toasted
Leafy green lettuce
Fried capers (recipe follows)
Fresh tartar sauce (recipe follows)
Préparation
Tartar Sauce:
1/2 Cup Mayo
3 Tbls Fresh Dill (or 2 tbls dry)
1 Tbls Finely Minced Onion
Blend together and Chill
Fried Capers:
3 Tbls Olive Oil
4 Tbls Capers, drained
Heat oil in a small saute pan, add capers and toss until crispy and brown, drain on paper towel

Wahoo Fish:
Drizzle fish with olive oil, soy sauce, salt and pepper, let sit for 5 minutes. Place fish on a broiling pan and broil for two minutes each side or until golden and cooked through
Assemblée
Paint each side of toasted roll with tartar sauce, layer lettuce leaf and wahoo, sprinkle with fried capers and serve
