The TEXAS TACO Trip!

I celebrated my birthday last week and took a trip to a lake side camping area in Texas. We drove more than 1400 miles through five states and arrived ripe for a hot shower, a cold margarita, some good company and of course an awesome sandwich! We were NOT disappointed!
Our hosts with the most cooked up an unbeatable feast of authentic Mexican Tacos with all the trimmings. No corners were cut for the sake of our diets to which we gave no thought and partook of all that was offered before us.
Above you see my taco, far too fat to be folded for finger eating, forcing me to use a fork. Those are freshly made re fried beans atop the mound of meat, and peeking out from the side is freshly married piko, made with all the exciting and mellow flavors of vine ripened tomatoes, onion, cilantro, etc.
With a little assist from Mother Nature and a plethora of champagne for toasting, a wonderful time was had by all. I arrived back home one year older, 10 pounds heavier, and given a few days to recover, ready to do it all over again.
