IT WASN'T EASY!

It wasn't easy finding store-bought bread that isn't white bread in disguise, so I made my own whole wheat. It wasn't easy finding a whole wheat bread recipe that didn't require eggs, sugar and kneading, so I used the Spelt bread recipe mentioned in an earlier post. It wasn't easy finding a loaf pan in my mix that would bake bread in the right shape to make these awesome little sandwiches.
It wasn't easy building them in such a way that they would fit onto my panini maker without all the ingredients spilling out over the sides. But I managed and as the first shot clearly shows, they turned out beautifully. Ingredients? Pounded skinless, boneless chicken breasts sauteed with onions in pecan oil, soy, and Sriracha hot chili sauce. It wasn't easy to resist layering these fantastic mini-slices of bread with a little mayo, the chicken saute mix, New Zealand white cheddar cheese, and kosher dill pickle slices, and my favorite trick..... put the mustard on the outside of the bread before placing on the panini grill. Not easy to make maybe, but so easy and delicious to eat.

  4. not sure if this is right but in " How to Marry a Millionaire" i want to say a chili cheese burger. Maybe one of them just said that. Its vague though!

    In Lolita, I am guessing turkey but I know it was lots of mayo.

  5. Ok these trivia questions are driving me mad! I am going to have to watch the ones that I thought for sure my hubby would know since he stores that kind of stuff in his awesome brain, but alas he knew less of them than I thought he would. now its movie night I suppose!
    Anyways, I think that Heathcliff Huxtable hid one under his pillow once. My friend Jenn seems to remember that too. So long ago!

  10. Oh my, these look amazing! What a great combination of flavors!

    I make the Dan Lepard simple milk loaf with 190 grams of whole wheat and 310 grams of bread flour with 1 tsp of instant yeast (his recipe calls for fresh, which I don't have, but 1 tsp for instant works well). I also use a little more butter and maple syrup than he calls for. It's the easiest recipe and requires nothing more than a spoon and a bowl.
