Lucile Wright's Tomato Sandwiches!

Lucile Wright was the most sought after caterer in Savannah. Her food was in such high demand that parties were sometimes rescheduled to suit her availability. Firmly established as local legend, Miss Lucile was made even more famous by the book "Midnight in the Garden of Good and Evil". Jim Williams loved to entertain and entertain he did, always quite lavishly. His Christmas party was the highlight of Savannah's social season, and the party would not be complete if the tables were not groaning with delectable bites provided by Miss Lucile. Bread: Use thin slices, whole wheat on the bottom and white on the top. Cut the bread into circles with a biscuit cutter or other shapes with cookie cutters. Prepare the bread a day ahead if you like.
Spread: Mix a little grated onion (too much makes it bitter). Black pepper and Accent into Hellmann's Mayonnaise. No measurements here... make it to taste. Spread the bread a day ahead, cover and refrigerate.
Tomatoes: Peel, slice and drain thoroughly between layers of paper towels. (Soggy tomatoes make soggy sandwiches.) Sprinkle the tomatoes with Lawry's Seasoned Salt before assembling the sandwiches. You may prepare the sandwiches several hours before a party. Cover with a damp tea towel and refrigerate. Merci Ms. Linderman, very special sandwiches indeed, Sam
