The Mumbai Veggie Sandwich!

This ethnic delight is the street food of Mumbai. Walk down any street and seek out a "Bhaiya" (sandwich vendor). Have him/her make you one to order. Simple, clean and deliciously different, the veggie sandwich is a staple for the people of Mumbai. It's served hot, on three slices of bread, and frankly I was shocked to see the use of ketsup. One of my favorite secret pleasures. We loved it!
The chutney is simple and so incredibly fresh tasting. I think when I make it at home I'll be putting it on many a sandwich.
Ingrédients
Green chutney
1 cup chopped cilantro
1/2 teaspoon salt
3/4 teaspoon sugar
2 teaspoon lemon juice
2 green chilies
Ground together makes an aromatic paste
The Sandwich
8 slices of bread
butter
1 beetroot, boiled
2 small potatoes, boiled
1 onion
1/2 cucumber
1 big tomato
Chat Masala
Assemblée First butter all the slices. Keep aside 2 buttered slices for the sukha.
Apply green chutney on remaining 6 slices. One by one slice the vegetable on bread slices as shown. Sprinkle a large pinch of chat masala over each layer.

Assemble all slices, veggie side up. Cover with a buttered/chutneyed slice with the plain side up. Press gently with your palm while cupping the sandwich with your fingers. Run the bread knife to trim the edges. Dot with ketchup and enjoy!
